Outdoor Cooking

Bar

Camp Breakfast
1 can refrigerator biscuits
1 package of little smokies sausages
1/2 pound of grated cheese

Open can of biscuits and separate. Pull the biscuit into two pieces. Place a smokie and cheese on a biscuit and wrap. Poke a coat hanger into smokie and cook over a charcoal grill or small open fire.

Foil Dinners (individual dinners)
1 serving meat
1 serving potatoes or rice
1 serving vegetable
Liquid as per menu (minimum of 2 tablespoons per dinner)
Salt and pepper to taste
Heavy duty aluminum foil

Hamburger Patty
1/4 - 1/3 lb. hamburger
1/2 - 1 potato, sliced
1 med. carrot, sliced thin
1 slice onion (optional)
2 tablespoons water or tomato sauce

Pork Chop
(same as hamburger)

Steak
(same as hamburger)

Fish
(same as hamburger)

Smoked Sausage
(same as hamburger)

Ham
1 slice (1/2") ham
1 sweet potato, sliced
1 slice pineapple
2 tablespoons pineapple juice

Chicken
1 serving chicken
1/3 cup rice
2/3 cup water
2 tablespoons cream of chicken soup
corn on the cob

Oriental Chicken
1 serving chicken
1/3 cup rice
2/3 cup water
1 slice pineapple
2 teaspoon soy sauce
corn on the cob

One Pot Meals (for 12 persons)

Mexican Breakfast
1 lb. bulk sausage
18 eggs
24 flour tortillas

Cook sausage. Set aside. Pour off most grease, add beaten eggs and cook until firm. Add crumbled drained sausage and fold into warm tortillas.

Texas Egg Crackle
1 lb. bacon
12 eggs
1/2 cup mild cheese (optional)
3/4 cup broken cheese crackers (Nips, Tid-bits, etc.)
flour tortillas

Cook bacon, crumble. Break crackers. Scramble eggs and cheese, add bacon. Just before eggs become completely dry, add bacon and crackers. Serve in tortillas.

Farmer's Breakfast
1/2 lb. bacon
1/2 onion, chopped
6 potatoes, cooked and diced
18 eggs
Salt and pepper

NOTE: The order in which the ingredients are cooked is important! Fry bacon, pour off most grease, reserve bacon. Brown onions, add potatoes and brown. Add beaten eggs and cook until firm. Add cooked bacon.

Shipwreck
1/2 lb. bacon
1/2 lb. sausage
1/2 onion, chopped (optional)
1/2 cup grated cheese
18 eggs
6 potatoes, cooked and diced
Salt and pepper

NOTE: The order in which the ingredients are cooked is important! Fry bacon and sausage, pour off most grease, reserve meat. Brown onions, add potatoes and brown. Add beaten eggs and cheese and cook until cheese melts. Add meat.

Master Plan
Into ONE pot put:
3 lbs. hamburger
1 green pepper
2 cans tomato soup
Salt and pepper to taste

For Spaghetti:
add 1 large pkg spaghetti (precook separately)

For Squaw Corn:
add 3 cans cream-style corn
and 1/2 lb. dried cheese

For Pirate's Stew:
add 3 cans baked beans
and 3 cans corn

For Mac Beef:
add 1 large pkg macaroni (precook separately)

For Rum Tum Diddy:
add 3 cans corn
and 1 lb. bacon
and 1/2 - 1 lb. cheddar cheese, grated

For Chili:
add 4 cans red kidney beans
and chili powder

For American Chop Suey:
add 4 cans spaghetti

For Spanish Rice:
add 1 large pkg Minute Rice (precook separately)

For Hunter's Stew:
add 4 cans vegetable soup

For Hungarian Hot Pot:
add 4 cans Campbell's pork and beans

Serve with:
Bread and butter
Milk
Cookies
Fruit

Dutch Oven Desserts (for 12 persons)

Brown Bears in Apple Orchard
Line dutch oven with heavy duty foil. Grease bottom with margarine. Line oven with 2-3 sliced apples. Mix and pour over fruit: 1 pkg of gingerbread mix. Cover and place in the coals. Cook approximately 30-45 minutes.

Cherry Cobbler
1 yellow or butter cake mix
1 stick butter or margarine
1 21 oz. can cherry pie filling
1 20 oz. can crushed pineapple, undrained

Line dutch oven with heavy duty foil. Slice 1/2 of butter in bottom of oven. Pour in 1/2 of the cake mix. Spoon in the pie filling and crushed pineapple. Do not mix. Pour in rest of cake mix. Slice remaining butter on top and place in coals. Cook approximately 30-45 minutes.

Biscuit Cobbler
2 cans cinnamon rolls or refrigerator biscuits
Cinnamon and sugar
3 cans sliced peaches or other fruit (cherries or apples)
1 stick butter or margarine

Melt margarine, add fruit, place cinnamon rolls on top of fruit. Cook approximately 30-45 minutes.

Dump Cake
Place in Dutch oven:
1 stick of butter or margarine, melted
1 29 oz. can sliced fruit

Dump over top and spread:
1 white or yellow cake mix

Stir to moisten. Dot top with 1/4 lb. butter or margarine. Cover and place in the coals. Cook approximately 30-45 minutes.

Variations:
Peaches, pineapple, cherries, apples, or 2 cans pie filling instead. When recipe is doubled, use juice from one can only.
